This morning at breakfast, we served a delicious alternative to our usual fresh fruit starter – a refreshing Tropical Strawberry Gazpacho which may well become a Captains House Inn signature recipe. Chef Kevin describes his creation as a “daiquiri minus the rum” while I have dubbed it our “dairy free strawberry smoothie.” No matter how you describe it, the soup is unarguably the perfect way to start a hot summer morning. And the icing on the cake? It is actually very healthy and will boost your energy for the rest of the day. You might even be able to forgo your usual cup (or five!) of coffee…

Tropical Strawberry Gazpacho
Tropical Strawberry Gazpacho
Ingredients:
One Mango (peeled, diced and frozen)
One Papaya (peeled, diced and frozen)
Two Cups Strawberries (washed, hulled, and frozen)
One Tablespoon Lemon Juice
2 Tablespoons Honey
2 Cups Apple Juice
Kiwi (for garnish)
Method:
Blend all ingredients.
Pour into soup bowls and garnish with kiwi.
* Note: you can substitute any kind of juice for the grape
juice. You may also use two mangoes or
